Tokyo Bekana is a lovely Japanese cabbage, much smaller and more tender than your standard supermarket Napa. Light green, wavy leaves are juicy and mild. Baby leaves make a great addition to salads, while mature heads are excellent lightly fried. Mature leaves have narrow stems and bunch nicely for market stands.
