Winter Purslane (also known as Miner’s Lettuce) is a succulent leafy green which loves growing in the cooler months of spring and autumn. Although used for generations before, it gained popularity during the Gold Rush, as it grew wild along the Western coast of North America. It became a staple in Miners’ diets, which helped them ward off scurvy due to its rich Vitamin C content. Winter Purslane can be eaten raw in salads or cooked, as you would spinach. Their leaves have a nice mild flavour, sure to be enjoyed by all!
